In the production of black tea, the process of oxidizing the tea leaves begins immediately after harvesting. The tea leaves are laid out on large mesh beds with hot air blowing underneath. In this process, the leaves lose their elasticity and some of their liquid. The soft tea leaves are then rolled to speed up oxidation. This process gives the black tea its characteristic flavor as the enzymes in the leaves react with the oxygen. The leaves are then dried in large ovens until about 3-4% liquid remains in the leaves.
Black tea should be stored in a cool, dry and dark place in jars that can be closed tightly and never near other foods that can cause the tea to lose its fine aroma.
